Make Your Own Pizza Date Night

Hello everyone!
Erik and I believe that it is important to keep dating each other even though we have been married for a few years.
Every week we try to sneak a date night in.
Date night can be anything.
Dinner and a movie, Netflix and take out, we have even made grocery shopping a date night.
As long as we are spending quality time together it counts.
One of our favorite date nights is to make a pizza dinner at home.
And like most things, I like to elevate it a bit.


Appetizers
While we are making and waiting for our pizzas to cook we like to snack on a little appetizer.


I like to make these Caprese Bites.
They are quick and easy to assemble.

You will need:
Mozzarella Cheese
Cherry Tomatoes
Fresh Basil Leaves
Balsamic Vinegar
Toothpicks

Cut the mozzarella cheese into bite sized cubes.
Place a fresh basil leaf on top and finish it off with a whole cherry tomato.
Place a toothpick through the middle to secure.
Drizzle with balsamic vinegar.


Aesthetic
We like to add light around the house for a little ambiance.
I place a few strands of twinkle lights around the table.
If we are feeling really fancy we will hang bistro lights above the dining table.


Erik and I do not drink alcohol but that does not mean we don't own and use wine glasses.
We make sure they come out for pizza night.
Erik enjoys Mountain Dew and I enjoy Diet Coke.


Music
We created our own personal playlist to play in the background during the evening.
It includes artists like Rosemary Clooney, Dean Martin and Lou Monte.
It definitely helps set the mood.


Pizza
Erik and I like to make dough for an authentic feeling.
We usually don't have much time on our hands so we use Betty Crocker's Crust Mix.
It's cheap and takes five minutes to make.
You can go even easier and buy pre-made pizza crust or go all out and make homemade pizza dough from scratch.
Whatever is easiest for you!


We love the taste of grilled pizza.
It's like having wood fired pizza!


Apply a thin layer of olive oil to your rolled out pizza dough.
Add to the grill olive oil side down on high heat.
Cook for three to four minutes.
Add a thin layer of olive oil and flip.
Add your desired toppings to the cooked side.
Let cook four to five minutes.
Remove from grill and enjoy!

Toppings
I enjoy a little more plain pizza like Margherita or Classic Pepperoni.
Erik enjoys more elaborate pizza like Meat Lovers or Hawaiian Barbecue.

Halved Cherry Tomatoes


This is such a fun and creative date night.
And it's easy to throw together so we enjoy it regularly.
