Homemade Cucumber Gazpacho

Hello everyone!
Now that Labor Day has come and gone it is officially fall around our house.
I know it's still technically summer until the end of September, the weather won't let me forget.
Since I am in fall mode but am sweating my buns off at the same time I decided to try my hand at gazpacho. 
It seemed the perfect compromise for my current predicament. 
Cold soup!
I found this recipe for cucumber soup via Pinterest and we gave it a whirl.


You will need:
2 Cucumbers, Seeded
1 Shallot, Chopped
1 Avacado, Skinned and Pitted
1/4 a Cup of Plain Greek Yogurt
1/3 a Cup of Olive Oil
Juice and Zest of 1 Lime
1/2 a Cup of Water
1 Tablespoon of Apple Cider Vinegar
1/2 a Teaspoon of Salt


Add the ingredients to a blender and blend until smooth.


Add more water if a thinner consistency is desired.
Taste and add more salt if needed. 
Chill for at least 1 hour before serving.
Enjoy!


How easy is that?!
I love gazpacho because it's light and healthy but, holds SO much flavor.
And now that I know how simple it is to whip up, I have a feeling it will make it into our dinner recipe rotation.
