My Family's Banana Bread

Hello everyone!
Today I am going to share with you my family's banana bread recipe.
I grew up eating this often, especially for breakfast!
It's the perfect recipe to whip up when your bananas start to look a little sad and for the start of the upcoming school year.


You will need:
2 Cups of Flour
1/4 a Teaspoon of Salt
1/2 a Teaspoon of Baking Soda
1 Teaspoon of Baking Powder
3 Ripe Bananas, Mashed
1/2 a Cup of Vegetable Oil
1 Cup of Sugar
2 Eggs
1 Teaspoon of Vanilla
Banana Chips, Optional


Preheat oven to 350o.
In a medium bowl, whisk the flour, salt, baking soda, and baking powder together. 
Set aside.
In a large bowl, mix together the mashed bananas, vegetable oil and sugar until well combined.
Add the eggs one at a time beating well after each addition. 
Add in the vanilla.
Slowly add the dry mixture into the wet mixture in thirds, incorporating well after each addition. 
Separate the batter into two greased 1 pound bread pans (or several small ones for more loaves!) and spread out evenly.
Gently apply a layer of banana chips to the top of the batter if desired.


Bake for one hour or until the tops are golden brown and a toothpick inserted into the middle comes out clean. 
Let cool.
Slice and enjoy!


Growing up we never placed banana chips on the banana bread but, I felt like it elevated the look and liked that it added some crunch.
This is one of my favorite family recipes.
Each time I eat it I am reminded of my childhood.
And Erik can never get enough!
