Large Homemade Oatmeal Creme Pies

Hello everyone!
I love Little Debbie snacks and have been seeing them on sale for the start of the school year.
So far I have been able to make it out of the store without any boxes.
Recently I made homemade Oatmeal Creme Pies and after seeing all the goodies on sale at the store I wanted to share with you!


You will need:
1 cup of softened, unsalted butter
3/4 a cup of firmly packed brown sugar
1/2 a cup of granulated sugar
2 large eggs
1 teaspoon of vanilla
1 and 1/2 cups of all purpose flour
1 teaspoon of baking soda
1 teaspoon of ground cinnamon
1/2 a teaspoon of salt
3 cups of old fashioned oats

Preheat oven to350o F.
Cream together the butter, sugar and brown sugar until light a fluffy, about three minutes.
Add in eggs and vanilla and mix until combined.
In a separate bowl whisk flour, baking soda, cinnamon and salt.
Slowly add the dry mixture to the wet mixture and stir until just combined.
Add in the oats and stir until well combined.
Using a three tablespoon cookie scoop, place balls on to a greased cookie sheet.
Bake 13-15 minutes or until golden brown.
Leave cookies on cookie sheet for five minutes.
Move to a cooling rack to cool completely.
Prepare creme filling.

You will need:
3/4 a cup of softened, unsalted butter
2 and 1/2 cups of powdered sugar
1 teaspoon of vanilla
1 tablespoon of milk

Beat butter for five minutes.
Slowly add in powdered sugar and mix until well combined.
Add in vanilla and milk and mix for another 3-5 minutes.
If needed add in more milk until you reach your desired consistency.

Pipe the filling onto the flat side of half of the cookies and top with the remaining halves.
Enjoy!


These turned out so yummy!
And I love how large they are.
