Cauliflower Crust Pizza

I'm not going to lie.
 Cauliflower crust pizza did not sound good to me at first.
It was a healthy take on pizza (I love pizza!) so I thought, hey why not?
Erik and I both really enjoyed it and make it often now.

It is written for a personal pizza but I doubled it so both of us could enjoy.
Our recipe is below


You will need:
1 head of cauliflower
2 cups shredded mozzarella cheese
2 eggs, beaten
2 teaspoons of dried oregano 
1 teaspoon crushed garlic
1 teaspoon of garlic salt
Olive oil 
Pizza sauce
Shredded cheese
Choice of pizza toppings

Preheat your oven to 450 degrees. 
Wash and remove stems and leaves from the head of cauliflower and chop into chunks. 
Grate or add chunks to food processor until the cauliflower looks like grain. 
Place into bowl and microwave for eight minutes. 
In a medium bowl mix the riced cauliflower, eggs and mozzarella. 
Add the oregano, garlic and garlic salt to the mixture, stir. 
Transfer the dough like mixture onto a pan and pat into a circle. 
Brush the top of the dough with olive oil. 
Bake for fifteen minutes. 
Remove from the oven. 
Add sauce, cheese and toppings to the crust. 
Broil on high for five minutes. 
Enjoy!
